What emulsifiers do in a gut
Carboxymethylcellulose, polysorbate 80, carrageenan: they keep a sauce from splitting. They also show up in studies on the lining of the gut. Pattern, not panic.
Shop the Snacks aisleWhy they exist
A factory needs a dressing that still looks like dressing after six months on a truck. Emulsifiers do that job. Your kitchen uses egg yolk and a whisk. The warehouse uses a number.
The cautious read
We mark the industrious ones moderate. Ice cream, processed sauces, some plant milks, some ‘healthy’ bars. If your gut is already loud — IBS, a flare — a week of short lists is a cheaper experiment than a new powder.
What to do in the aisle
You do not have to memorise E-numbers. Scan. If the extras list is a paragraph, pick the neighbour with five words. That is the whole guide.
